Lemon Bars

I had a page long "to do" list this morning, but for some reason I could not accomplish any task until I made a batch of homemade lemon bars from a cookbook I just picked up at the local library.  At some point in the last year I became obsessed with all things lemon and this cookbook just takes my obsession to a new level.  This recipe called for an entire two tablespoons of lemon zest in the shortbread crust, which was a new addition for me in cooking this dessert.  The filling was classic . . . eggs, sugar, lemon juice, and a little flour and baking powder.  So excited to eat on this treat for the next couple days (if it lasts that long)!
